“Maybe I’m exaggerating, but not so much. In fact, the industrial eater does not know that eating is an agricultural act, he no longer knows or imagines the connections that exist between the act of eating and the earth and he is therefore necessarily passive and uncritical, in other words, a victim. When food, in the minds of those who eat it, is no longer linked to agriculture and land, one suffers from a dangerous and misleading cultural amnesia. “

Product
Our philosophy is simple…to work as best we can, respecting the limits and the rhythms of nature, to be able to obtain quality products that tell a story made of territory, people and passion.
The business model of the company develops from this approach; we are always looking for new crops, rediscovering old traditions and new processes, trying to keep them linked to offering good fruits.
Our range of products is born from this philosophy:
CEREALS
- Spelt
In our company we grow “Dicocco” Spelt that is transformed into:
-
- Pearled Spelt: Once harvested, the cereal is peeled, pearled and packaged in a controlled atmosphere. This process ensures that the spelled grain keeps all its organoleptic and nutritional characteristics. Our pearled spelt is perfect cold for tasty salads or hot for nutritious and delicious soups.
-
- Whole Wheat Flour: Once harvested, the cereal is dehusked and milled in a stone mill. It is then packaged in a controlled atmosphere. Our spelled flour is excellent on its own in the preparation of sweet and savory baked products. Mixed with our soft wheat flour, it is also very suitable for the preparation of fresh egg pasta, wraps, etc … .
- Hulled Barley
In our company we grow Hulled Barley, a particular species of Barley like the one cultivated by our grandparents which we then transform into:
-
- Ground Roasted Barley: We have rediscovered the traditional drink of our grandparents … barley coffee. We cultivate Hulled Barley, a particular variety of spring barley that is very suitable for roasting. Once roasted, the barley is milled and it is ready to be used both with the moka pot and the coffee machine.
-
- Whole Wheat Flour: Barley was already known in Roman times who knew its nutritional properties and used it regularly in their diet. Once harvested, the cereal is milled in a stone mill and then packaged. The Hulled Barley flour, mixed with our Soft Wheat flour, is very suitable for the preparation of bread, biscuits and shortcrust pastry products.
- Soft Wheat
We grow a variety of Soft Wheat (Photo) that we have been passing on for decades within our company. We do not know what variety it is, probably a mixture of “Bologna”, “Gentil Rosso” and other seeds grains that farmers used to exchange. We use our Soft Wheat to produce:
-
- Type 2 Flour: This type of flour is the most similar to Whole Wheat Flour, in organoleptic and nutritional terms. It is very suitable for baking, both with brewer’s yeast and starter, for the production of common bread, oil sandwiches, rosemary focaccia, pizzas, and breadsticks. This flour also expresses its qualities in the preparation of desserts, such as donuts and biscuits.
-
- Whole Wheat Flour: This flour contains everything that the wheat has to give us. In fact it is the less refined and most nutritious form. It contains all the fibers and mineral salts naturally present in wheat grain. A good usage of this flour is for baking 250 grams bread, which can also be used as stale bread. Whole Wheat flour bread is also excellent toasted in the oven to be used as a crouton for cereal soups or vegetable and legume soups.
- Durum Wheat
As with Soft Wheat, we have been using our seeds for years for Durum Wheat too. Over time we have obtained a wheat suitable for our territory, appropriate for the poor land we cultivate. With our Durum Wheat we produce the wholemeal bran that we use in the production of fresh and dry pasta.
From the use of our bran and flour we obtain two important categories of products:
PASTA
We mainly deal with two types of pasta: dry pasta and fresh pasta.
With our durum wheat bran we produce semi-wholemeal dry pasta, bronze- drawn and slowly dried. Compared to the common commercial pasta shapes, our products stand out for their robust and tasty consistency. Our pasta is suitable for any type of sauce but we recommend to taste it with our olive oil to appreciate the real savor. Only in this way you can truly understand and enjoy the uniqueness of the product.
In addition to dry pasta, we also produce Fresh Pasta to be consumed within a day. For longer periods, we freeze the pasta to keep its organoleptic properties and flavor unchanged. Also in this case the pasta is bronze-drawn, to give it an ideal roughness for any type of sauce or dressing. The peculiarity of frozen pasta is the cooking speed. This feature is ideal for those who have little time but do not want to renounce a good plate of pasta.
As for durum wheat, we produce the same dry or fresh formats also with spelt. Also in this case the obtained food specialties are high-quality products, as they are characterized by top quality raw material and by careful and accurate food processing.

BREAD
Needless to say, if we recommend our flours for making bread, it is because we know that they are suitable for this purpose. This is because we ourselves are the first to verify its qualities, trying new recipes and new uses every day, sometimes making mistakes, always with the awareness that every error of today will be a starting point for tomorrow. In our company laboratory we produce bread on request, strictly with mother yeast. It is useless to focus on the well-known peculiarities of the starter: the only thing we want to do is let you taste it. We can make many formats, for example sandwiches of 70 grams up to 1 kg loaves, passing through breadsticks, croutons and much more.
HONEY
We produce Millefiori Honey leaving the bees free to collect where and when they want. We are committed to providing them with an environment that is as healthy and hospitable as possible. For this reason we do not only produce with organic method, but we also cultivate honey plants such as Sunflower, Sulla and Alfalfa, trying to cover every corner of our company with grass by mowing only after the end of flowering.
EXTRA VIRGIN OLIVE OIL
EVO Olive Oil is the king of all food oils. In our company we cultivate an olive tree grove consisting of different cultivars, to ensure that the flavor of the oil is complex and pleasant, never predictable. The olives are harvested and pressed on the same day to prevent the organoleptic qualities from being compromised.
SUNFLOWER OIL
Unlike industrial seed oils that are chemically extracted, our Sunflower Oil is extracted by mechanical pressing, leaving unchanged all the aromas and nutritional elements of which the sunflower is naturally endowed.
